Mexican Pizza Felicia Style... lol

okay.. so i found THIS recipe on pinterest for a healthier version of taco bells mexican pizza with no meat... well we all know that i like meat and LOOOOOOOVE cooking tacos... so i changed it up a bit and it turned out really good and had lots more calories.. bahaha however it was delicious... so i thought id share. =]

WHAT YOU NEED:
Tortillas (i used 8in flour tortillas)
vegetable or canola oil
Taco Meat (made like you normally would for tacos)
refried beans
shredded cheese
shredded lettuce
tomatoes (if you like, i dont! lol)
salsa
sour cream (i like!!)

INSTRUCTIONS:
1. Set oven to BROIL on LOW.
2. Line a baking sheet with foil
3.Place 2 tortillas on a flat surface and lightly glaze/brush both sides of the tortilla with oil.
4. Place both tortillas on the foil tray and broil them for a few minutes.
(watch to make sure they dont get too brown... and flip to make both sides lightly browned and CRISPY)
**leave the oven on**
5. Once the tortillas are crispy, layer refried beans, taco meat, and shredded cheese.
(careful! they're suuper hot!!)

 

6. Top with 2nd tortilla and layer refried beans, taco meat and shredded cheese again. Then place it back in the oven to melt the cheese.... not long at all =]

7. Top with lettuce, tomatoes (if you like), sour cream and salsa...then cut in 4ths with a pizza cutter and ENJOY!

first RECIPE blog! Paula Deen's Gooey Butter Cake!!

Ok.. yall i forgot to take pics at the beginning... lol but heres the RECIPE!!!


INGREDIENTS:

Cake:
1 18 1/4-ounce package yellow cake mix
1 egg
8 tablespoons butter, melted




[vanilla not pictured]
Filling:
1 8-ounce package cream cheese, softened
2 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
16 oz powdered sugar [4 cups]                                                                            




DIRECTIONS:
1. Preheat oven to 350 degrees F
2. Combine the cake mix, egg, and butter and mix well with an electric mixer.
3. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.

4. In a large bowl, beat the cream cheese until smooth.
5. Add the eggs, vanilla, and butter and beat together.


6. Add the powdered sugar and mix well.

**gets pretty thick!**

7. Spread over cake batter and bake for 40 to 50 minutes
**Make sure not to over bake as the center should be a little gooey.**

8. Let them cool, cut, and ENJOY!!!

because of my sister....

ok... so my first blog is gonna be about my sweet girl Ellie. My sister Makayla said when i started this blog that "all i am gonna do is talk about Ellie". so here goes.... =]

Ellie is our long-haired teacup chihuahua. She'll be 1 year old on June 10th. We got her as my birthday present to myself on 8.19.11..(my birthday is the 17th).. =]


Ellie is the Sweetest chihuahua ever.... really.... i never really liked small dogs (ankle biters..as my mom calls them) in general because they are always so protective and usually not nice to people besides their owners... but Ellie LOVES everyone.... she will give ANYONE kisses =]  Although she is kinda weird around other dogs... some dogs shes fine with.. others, like my sisters dogs Droid and Lola.. she HATES them... she goes crazy.. barking and growling.. and shes only 4 lbs!!!!

Ellie also LOVES to dress up... for ANY occasion...

and she LOVES to ride in the car... she wants to go EVERYWHERE with us!


Ellie can do a trick like her cousin Sunni, she can DANCE!!! She's so cute, she turns in circles on her hind legs. She also loves Max and Baby, our cats. They LOVE to play together, and nap together.
